rustic pear pie…

here’s the rustic pear pie recipe i promised to share. enjoy.

rustic pear pie

ingredients

for the crust
make this pate sucree recipe from martha stewart.

for the filling
2 cups sliced pears [about 2-3 pears]
1 cup sugar
2 tbsp corn starch
1/4 c butter, melted
2 tbsp lemon juice
1/2 tsp cinnamon
1/4 tsp freshly grated nutmeg
1 tsp vanilla

for egg wash
1 yolk, whisked
1 tsp water

directions
make the crust according to directions. line a rimmed baking sheet with aluminum foil. flour a large (about 16 inches long) piece of parchment paper. place dough on paper. using your knuckles, press edges of dough so it doesn’t crack during rolling. lightly flour top of dough to prevent sticking; roll out to a 14-inch round. Transfer dough (still on parchment) to prepared baking sheet.
combine all the filling ingredients and mound the mixture in the center of the prepared crust, make sure to leave a 2 inch border all around. fold the border over the filling in a pleated pattern. brush the dough with the egg wash.
bake at 400 degrees for 45 minutes until the crust is brown and the filling is bubbling. transfer to a rack and cool 20 minutes. serve warm or at room temperature.

*note. some of the filling may bubble out, but it should clean up fine as long as you line the baking sheet with foil.
