puff pastry …

December 31, 2009

My new favorite thing to use in the kitchen is puff pastry. when making my mom’s famous french apple tart for thanksgiving this year. i decided to substitute my usual dough recipe for puff pastry. It was a hit!
Puff pastry adds some instant fancy, and best of all, you can buy it in your grocer’s freezer!
Puff pastry is a delicious, light flaky pastry made from dozens of layers of specially prepared pastry dough.   The beautiful dough “puffs” when baked, causing the layers to separate.
You can make pastry dough from scratch, which can take a full day.  Or, you can cheat a little like me, and buy it in the freezer section at your local grocery store.
Puff pastry is always a show stopper.  You can make anything take on some instant fancy when you use puff pastry.
Here’s a few Tips and Recipes for using puff pastry.
And, who knows?  Maybe this will be on your table tonight for the big New Year countdown?!
Puff Pastry Tips
  • Thaw pastry dough at room temperature for at least 20 minutes.
  • Work with one pastry sheet at a time.  Keep others refrigerated.
  • Handle the pastry as little as possible to ensure tenderness.
  • Seal filled pastry edges with a mixture of water and eggs, then pinch and press together.
  • When baking, line the cooking sheet with parchment paper to avoid sticking.

I've used puff pastry before but never tried these Martha-esque tarts. I think it's time. Love the photo.

Also–I was inspired by your pesto mayo and used it on some yummy sandwiches for a family party yesterday…it was a big hit. So yummy! I will do it again. Thx.
