corn fritters …

To me, corn fritters bring back fond memories of running through the sprinklers as a child, and taking a little break on the back steps as my mom handed us each a hot corn fritter.
I love when summer sweet corn is at it’s peak!  There nothing better than some nice fresh sweet corn!  For those of us who have corn out of our ears, check out this corn fritter recipe!
{Corn Fritters}
makes about 8-10 fritters
ingredients
1/2 c flour
1/3 c milk
1 egg, beaten
2 1/2-3 cups fresh corn kernels [about 3-4 ears}
1/2 cup green onions, chopped
1 tsp baking powder
1/4 tsp pepper
1/4 tsp salt
2 shakes paprika
2-3 shakes garlic powder
combine flour and baking powder in a medium bowl.  add milk and stir well, add eggs then the rest of the ingredients.
on a skillet add 1 tsp oil and heat over medium to medium high heat.  Add a rounded tablespoon of mixture and drop onto skillet.  cook about 2 minutes per side like pancakes.
these would be great with some sour cream and chives or creme fraiche!

    Hi

    I've tried this recipe alot and its really good but i was just wondering….

    Is it baking powder or soda?

    You listed baking powder in the ingredients but say soda in the recipe…
