The New Year is such a promising time.  A time to reflect on the previous year, and to celebrate with the hope and desires we have for the year to come.
A good New Year’s celebration is a great way to ring in another year, and spend time with the ones you love.  My favorite way to entertain is with good fun, and most of all, good food.  Food can make or break a party, so it is important to serve food with quality ingredients that impress your guests, and their taste buds.  Simple appetizers are my favorite to serve on holidays, especially New Year’s Eve.
Appetizers are easy to eat, and they still leave you with an appetite to be able to try a variety of foods. I am partnering with Overstock Farmer’s Market today, to bring you a simple yet impressive New Year’s Appetizer that is sure to please your guests and their palate.

This Crostini with Prime Rib and Blue Cheese appetizer looks fancy, is filling, but is simple to put together for any skill level.  The Prime Rib from Land and Cattle Co out of Colorado is the perfect prime cut of all-natural, grass fed, pasture raised meat to help celebrate an occasion like New Year’s Eve.  The Prime Rib is so flavorful you don’t need to season it with anything but some Kosher salt and Fresh Ground Pepper.

Prime Rib
Kosher Salt
Freshly Ground Black Pepper

Heat oven to 350 Degrees.
Heat a cast iron skillet over medium high heat.
Pat the Prime Rib until it is nice and dry with a towel.  Sprinkle with a generous amount of Kosher salt and Fresh Ground Pepper all over the Prime Rib.  Brown in the skillet about a minute or so on each side until a nice brown crust forms on each side.
Place on a roasting pan with fat side up.  Roast at 350 degrees for about 15 minutes per pound of Prime Rib or until internal temperature hits 120 degrees for rare or 130 degrees for medium rare.  Prime Rib is best when served rare or medium rare.  Allow the Prime Rib to rest out of the oven for a minimum of 20 minutes before slicing.

Blue Cheese Sauce
3/4 cup Rogue Creamery Blue cheese, crumbled
1/3 cup mayonnaise
1/2 cup plain greek yogurt
1/3 cup sour cream
2 small cloves garlic minced very small
2 tablespoons fresh chives, chopped
1/3 cup heavy cream
Salt and Fresh Ground Pepper to taste
Place in a blender or food processor, and blend well. Set aside.

1-2 Baguettes sliced at a slight angle about 1/2 inch thick.
4 cups fresh baby arugula, washed and dried
4 tablespoons fresh chives, chopped
Place sliced baguettes on a parchment lined baking sheet and drizzle on both sides with a little olive oil.  Place in a 400 degree preheated oven and toast on both sides a few minutes per side, or until slightly toasted.  Remove from oven and allow to cool.

Spread a small amount of the Blue Cheese sauce onto the bread and place a few pieces of arugula on top of the blue cheese spread.  Place a small slice of Prime Rib, then place another little spoonful of the  blue cheese sauce on top with a few blue cheese crumbles, then top with some freshly chopped chives.

Place on a serving tray and serve immediately.
