pumpkin risotto …

Can you believe fall is already here?

We’ve already had some cold days around here, and it leaves me craving some warm comfort food.

It seems like everything I’ve been eating these days has something with pumpkin in it!  I’m obsessed!

Pumpkin Risotto
Serves 4
2 tablespoons un-salted butter
3 shallots, minced (about 1 cup)
1 tsp fresh sage, chopped small
1 tsp fresh thyme, chopped small
1 1/4 cups arborio rice
1/4 cup white wine
6 cups chicken broth
1 cup pumpkin puree (Learn how to make your own homemade pumpkin puree here)
1/2 cup freshly grated parmesan
Fresh ground pepper to taste
Bring broth to a simmer in a medium saucepan.  Keep broth at a bare simmer, covered.
Cook shallots, fresh sage, and thyme in 2 tablespoons butter  in a 4-quart heavy saucepan over medium heat, stirring occasionally, until softened, about 5-10 minutes.
Add rice and cook, stirring constantly, 1 minute. Add wine and simmer, stirring constantly, until absorbed.
Stir in 1/2 cup broth mixture and briskly simmer, stirring frequently, until absorbed. Continue adding broth, 1/2 cup at a time, stirring frequently and letting each addition be absorbed before adding the next, until rice is creamy and tender but still al dente (it should be the consistency of a thick soup), about 18 minutes.
Stir in pumpkin puree, and parmesan. Turn off heat, and add pepper to taste.
*stir in 2-3 drops of white truffle oil if you have some and want to bring the dish over the top! I’m not kidding!

passport to imagination

I am excited to announce my partnership with Michaels craft store and their Passport to Imagination 7-week crafting camp for children ages 5 and up!

Michaels  thinks it is important to take the un-plugged summer pact, and cut back on at least 2 hours a day from any sort of time spent interacting with a technological screen.

This summer fun craft camp couldn’t come soon enough!  Today is the first day of our summer break, and already my kids are complaining about being bored!  It could be a long summer.

I am excited for my children to attend and make some very fun crafts that explore the 7 continents of the world!  This will definitely help with summer boredom and keep them from being infront of the TV!

The classes start June 17th, are held every Monday, Wednesday, and Friday 10am to noon at most Michaels stores, and are only $2 per session! (a steal!)   Hope to see you there!

Father’s Day is a great day to celebrate all the Dad’s in our lives!

Something that my dad did for me growing up was that he exposed me to beautiful things.  My dad is from France, and growing up we traveled to France quite often, almost every summer.  I learned to appreciate the beautiful things in life such as art, food, architecture, languages, travel and cultures.  I absolutely loved all the time I spent in France, and the things I learned!

One of my favorite things I have learned from all the times my dad took me to France was an appreciation for food!

A simple meat and cheese platter is easy to put together, you just need a few high quality ingredients.  Here’s a few of my tips!

I like to put out a few of favorite cheese selections, some sliced dried meat, fruit, olives, and crackers.  But, really you can do a number of combinations.

For my cheese board I used:
Castelvetrano olives

Carr Table Crackers
Dried Dates
Gruyere Cheese
Dried Sliced Salami
Cambozola Cheese
Green Grapes
Cutie Clementine Oranges

It also makes for a great snack or a fun lunch!   Maybe even a great appetizer to serve on Father’s Day!
