Cheesecake is always a crowd favorite, but can be a little tricky to master, and a bit time consuming. However, this No-Bake cheesecake is simple, and perfectly light and sweet, and is finished off with the most delicious homemade crust and homemade raspberry sauce that is to die for!

No Bake Cheesecake with Homemade Raspberry Sauce Recipe
Serves 7-10
Ingredients
Crust
4 C. Graham Crackers,  (about 2 1/2 – 3 packs), crushed (I like Honey Maid Brand, NOT Keebler)
4 Tablespoons Powdered Sugar
1 Cup Melted Butter

Crush the Graham Crackers in a food processor, add Powdered Sugar, and drizzle in Melt Butter and pulse together.  Spread into 9×13 pan or 9 inch spring form cake pan using the bottom of a glass to keep in smooth and not too thick.

Filling
2  8 oz cream cheese packages, at room temperature
2  cups Powdered Sugar
2 tsps Vanilla (I love to use Vanilla Bean Paste (affiliate), always my secret ingredient!)
5 Tablespoons Milk
1 1/2 Tablespoons Fresh Lemon Juice

Place the cream cheese in a stand mixer bowl with the paddle attachment.  Mix the cream cheese until smooth for about a minute or two.  Slowly add the powdered sugar, then vanilla, milk and fresh lemon juice.1 1/2 cups heavy whipping cream

Mix heavy cream with a whisk in a standing mixture until medium to stiff peaks.Fold into Whipped Cream.  Poor onto Graham Cracker Crust.  Refrigerate until set, at least 3-4 hours.  Serve topped with the fresh raspberry sauce and fresh raspberries.

Homemade Fresh Raspberry Sauce Recipe

3 cups (16 oz) fresh raspberries, washed
1/2 cup sugar (more or less depending on how sweet you like it)
1 tablespoon fresh lemon juice

In a small saucepan, smash all the raspberries together or run them through a food processor.  Place raspberries, sugar, and lemon juice in a small saucepan over medium heat.  Stir while it is heating up, once it starts to bubble, turn heat down to medium low and boil continue to stir for another 2-3 minutes.  Remove from heat.  Place in a container, and allow to completely cool, refrigerate.

Slice the cheesecake, and serve it with fresh raspberry sauce and fresh raspberries.

New Year’s Day Brunch // Add a Little Sparkle …

Another New Year is upon us, and it is hard to believe 2015 has come to an end.  It seems the years are moving along quicker and quicker these days.  It is nice to stop and reflect on the year, and realize all the good and bad that has happened, and move forward with greater knowledge with hopes of doing better.
New Year’s  Day brunch is the perfect way to start fresh and with the right foot forward.  A simple, yet elegant table will help you ring in the New Year with just the right amount of sparkle.
I was arranging some flowers, and was thinking of a way to dress up some ordinary flowers with a little sparkle for the New Year.  I had some fun little gold and sparkly ornaments laying around from Christmas, so I decided to add a few to the vase after I had arranged the flowers.  They added another element of sparkle to the table, and were a fun yet simple way to make my arrangements more festive for the New Year.  I just added the ornaments to the arrangement after I finished arranging the flowers, then added the water.

New Years Eve Appetizers
The New Year is such a promising time.  A time to reflect on the previous year, and to celebrate with the hope and desires we have for the year to come.
A good New Year’s celebration is a great way to ring in another year, and spend time with the ones you love.  My favorite way to entertain is with good fun, and most of all, good food.  Food can make or break a party, so it is important to serve food with quality ingredients that impress your guests, and their taste buds.  Simple appetizers are my favorite to serve on holidays, especially New Year’s Eve.
