I love to add a little twist to the norm in the kitchen.  Lately, I have really enjoying these tasty sunny side up egg sandwiches!  There is something about the semi-cooked egg yolks seeping into parts of your sandwich.  So tasty!
They are a great option for breakfast, lunch, (brunch) or even a quick and easy dinner!
This is a great sandwich with so many fresh ingredients!

Recipe // kale chips

February 23, 2012

Kale chips have been all the rage lately according to the internet, and I have to agree!  I love them too!
I am a big fan of kale, so I love to cook up these kale chips when I am in the mood for something a little crunchy, but still healthy for you.  Kale is a form of cabbage, and is very high in beta carotene, vitamins K, C, lutein, rich in calcium, and have anti-cancer properties.
Kale chips are very easy to make, but be sure to make a few batches, because they don’t last too long, they are addicting!
{Kale Chips}
1 bunch kale, washed, dried, torn into small pieces
1-2 tablespoons olive oil
sea salt
smoked paprika
fresh ground pepper
Heat your oven to 350 degrees.
Place washed kale on to large cookie sheet, and drizzle with olive oil.  Massage the olive oil into all of the leaves.  Spread out over the cookie sheet evenly, and sprinkle with a little sea salt, smoked paprika, and fresh ground pepper.
Place in the oven and bake for 15-20 minutes or until nice and crispy.  Mix the kale, and turn over once during the cooking and be sure not to burn!
*you add any spices to your liking!
Enjoy!
