i’ve made this for dinner twice in the last week.. sooo good!
try it, you won’t be disappointed.
{maple roasted chicken + sweet potatoes}
1lb chicken tenderloins
1 small yellow onion [or 1/2 large onion] cut into strips
1 large sweet potato, cut into thin pieces
2 TBS olive oil
1/3 cup pure maple syrup
1 tsp kosher salt
ground pepper
6 sprigs fresh thyme
toss chicken, potatoes, and onions in the olive oil. sprinkle the rest over the top. bake at 425 degrees for 45-60 minutes.
serve with a nice salad.

that looks so good.. my kids would not eat it, but it looks great… kids are soo picky….good thing they are cute!!
