blackberry pancakes …

pancakes are such a special treat in the morning.
why not liven up the same old pancakes with a little surprise when you bit into them?
i love adding fresh blackberries to my pancakes, the blackberries cook just beautifully inside the pancakes to give them a great flavor.   and, of course it doesn’t hurt to add a dollop of freshly whipped cream and strawberries to the top.

ingredients
2 1/4 cups sifted flour
2 tablespoons sugar
1 tablespoon baking powder
1/2 tsp salt
1 3/4 cups milk
2 eggs, slightly beaten
2 tablespoons vegetable oil
1 1/2 – 2 cup fresh blackberries
directions
sift flour, sugar, baking powder, and salt.  in a mixing bowl combine eggs, milk, and oil.  add the dry ingredients.  stir well only until lumps disappear.  add blackberries last stirring gently not to break them up.
preheat a skillet over medium to medium high heat,  350 degrees.  pour 1/4 cup of batter onto the skillet for each pancake, and bake until it bubbles break and edges are cooked.  turn and bake on the other side, about 1 minute per side.  serve immediately.
makes about 20-24 pancakes.
*serve with pure maple syrup, freshly whipped cream, and berries.  top it with some lemon/orange zest to really impress your table.
