sweet + sour meatballs …

There a few dishes that I like to repeat over and over in our household.
This Sweet and Sour Meatball dish is one of them.  It’s perfectly sweet and perfectly sour.  And, it goes well with rice, which is a staple at our house.
You can make your own meatballs, which I prefer, but if you are in a crunch for time, you can cook up this dish in no time with some frozen ones as well.
{Sweet and Sour Meatballs}
serves 4
for the meatballs
1 lb ground beef
1 egg
1/2 cup plain bread crumbs
1/4 cup onion, diced small
1 clove garlic, minced
salt and fresh ground pepper
mix all the ingredients well and form into 1 1/2 – 2 inch balls.  place on parchment lined baking sheet and place in oven on broil for about 10 minutes or until brown.  you could also brown them in a skillet until evenly brown on each side.  they will be cooked all the way through with the sauce, so they just need to be browned.
sauce
1 medium green pepper, cut in 1 inch chunks
1 medium red pepper, cut in 1 inch chunks
1/2 medium yellow onion, cut in 1 inch chunks
1/2 cup water
1/2 cup apricot jam
4 tbs soy sauce
2-3 cloves garlic, minced
1 tbs fresh ginger, minced
1/2 cup vinegar
4 tbs ketchup
3/4 cup sugar
1 8 oz can pineapple chunks in their own juice [add juice as well to the mixture]
combine all ingredients and prepared meatballs in a large stockpot and cover.  cook on medium heat for 10 minutes. stir occasionally.
increase the heat to medium high and uncover. cook another 8-10 minutes or until the sauce is thicker and the meatballs are heated through, stir occasionally.
serve over hot cooked rice.
