chicken and wild rice soup …

As you can tell, I love to make soup.  With the weather still deciding if it is spring or not, this soup has been keeping me warm on some cold spring days.
It is not only healthy, but it also is a quick to throw together when you are wondering what is for dinner last minute.  That is why I love this quick and easy chicken and wild rice soup.  You just have to throw all of the ingredients in a pot and simmer away and it’s done in no time.  And, it’s even faster for dinner if you chop all the ingredients the night before.
{Easy Chicken and Wild Rice Soup}
serves 4-6
8 cups chicken broth
2 large chicken breasts, cooked and shredded
2 cloves garlic, minced
1 medium onion, diced
1 1/2 cups celery, chopped
2 cups carrots, chopped
1 cup leeks, chopped
2 tbs fresh parsley, chopped
1 tbs fresh thyme leaves, chopped
1 full bay leaf, dried
3/4 cup wild rice, uncooked
1 tsp fresh ground pepper
1 tsp salt
1 tbs fresh lemon juice
directions
place all of the ingredients in a large stock pot and bring to a boil.  reduce heat to medium low, cover and simmer for 1 hour, or until vegetables are tender and rice is cooked.
