I took my children raspberry picking recently at a local farm, and it was such a fun activity for them to get outside with local produce, and pick their one of their favorite fruits. They may have eaten more than they picked, but we were able to come home with a good amount of raspberries. We decided we would make some homemade raspberry sauce for our ice cream. It is very easy to make, and it is so fresh and tasty!
{Homemade Raspberry Sauce}
makes about 2 cups
4 cups fresh raspberries (about 1 lb)
juice of 1/2 a lemon
1/4 cup sugar
1/2 tablespoon corn starch
juice of 1/2 a lemon
1/4 cup sugar
1/2 tablespoon corn starch
Place raspberries, lemon juice, and sugar in a blender, and blend well. Place blended mixture into a saucepan, and bring to a boil over medium heat, stirring constantly. When boiling, whisk in corn starch very fast until dissolved, and stir until the mixture thickens.
Remove from heat, and send through a strainer to remove any seeds.
Serve over ice cream, cheese cake, cake, or anything really! It doesn’t disappoint!
Oh yum! We will have a fall crop of raspberries in our garden … I can't wait to try this.
