Recipe // homemade larabars

May 25, 2012

There are a lot of high energy bars on the market, but many  are filled with a lot of crazy artificial ingredients.  Larabars are a great choice for store bought bars and contain all whole ingredients, but they can be a little pricey.  But, did you know that you can make your own high energy bars?  They are so simple to make, and they are so tasty.  I’ve been caring some around with me as I go about my day, and they have really saved me from the low blood sugar moments, when you need a little something to keep you going.
There are endless combinations you can do, but today I am sharing a almond, oat and coconut flavor.
{Almond, Oat, Coconut Homemade Larabars}
Makes about 12 bars
2 1/2 cup dates, I prefer Medjool dates (pitted)
1 1/4 raw almonds
2 tbs peanut butter
1/4 cup raw old fashion oats
1/4 cup unsweetened coconut flakes
Places dates in a food processor, and process until the dates become a paste.  Place paste in a medium bowl.  Next add almonds, oats, and coconut.  Process until just roughly chopped, or a little longer if you prefer it less chunky.  Add peanut butter, and date paste back and process until it comes together.  If you machine has a hard time processing, at this point you can just mix it all by hand in a bowl.  If you don’t have a food processor you can also just finely chop all the ingredients then mix it together well.
Next, in a 8×8 pan place wax or parchment paper to line the pan and edges.  Press mixture into the pan nice and flat.  Cover with plastic wrap and place in fridge for about thirty minutes to set up.  Remove and cut into bars.  Should keep in the fridge for a week!
Enjoy!!

Recipe // quick and easy trail mix

May 10, 2012

Eating on the go doesn’t mean that you can’t eat healthy. Their are a lot of portable snacks that are healthy and quick to put together for us busy people. Fruit and vegetable are super portable, and quick to grab on the go! Apples, bananas, carrot sticks involve little or no preparation, and you can be out the door!
Trail mixes are also a healthy snack that you can put together quick!
Trail mixes are simple to put together!
I like to use raw nuts, dried fruit, coconut, dark chocolate, and seeds! But, the best part is, you can really put whatever you like into the mix!
Enjoy!
