Some times it can be hard to come up good ideas for healthy meals for kids, but you don’t have to sweat it.  Kids love simple, and serving up some healthy kids snacks in a muffin tin tray is a fun way to get kids to eat healthy!

On those busy days when I am working, or not in the mood to make a big fuss over a meal, I whip out the Muffin or cupcake tins, and get started filling them up with healthy options that my kids love.

I don’t know what it is about the way it is presented, but my kids go nuts over having little compartments full of snacks and healthy foods to eat.  They love not having a plate, and sometimes I put a blanket out, and they can just snack and munch on the floor picnic style.

There really aren’t any rules to what you can put in the tins, but here are a few things I usually use:

  • Fresh fruit-  sliced fresh fruit, or whole fruits.  I just make sure it is washed and bite sized.  You could even add dried fruits, like raisins, or freeze dried strawberries.
  • Fresh Vegetables-  again, washed and cut bite-sized ready to eat.  You could even save a tin for some dipping sauces like hummus, or ranch if your kids prefer that.
  • Cheese-  If I have a minute I’ll let the kids help cut out fun shapes with cookie cutters in the cheese, or I’ll just cut up some string cheese, or cube some different varieties of cheeses.
  • Meats- I’ll find some good quality deli-meats free from nitrates or antibiotics and cut them up in cubes, or roll them up.  We also love salamis, or sausages.
  • Nuts- Sometimes I’ll add some raw nuts.  Almonds, peanuts, cashews.  My kids do not have any allergies, so they enjoy snacking on nuts.
  • Crackers-  I love adding some crackers in the tins.  My oldest loves to make little “sandwiches” with the crackers and meats and cheeses.  We love the Annie’s Organic Cheddar Bunnies, and Rice Crackers.
  • Themed-  When it is near a certain holiday like St. Patrick’s Day, I have made the snack tins with all green foods.  It’s fun for the kids, and they love something new and festive for lunch.

The best part about the Muffin Tin Meals is that you really can do what ever you want.  Anything goes!  If there is a bit-sized healthy snack or food that your child loves, throw it in there!  They will be thrilled!  You could even pack it up, cover it up and bring it along to the park with you for some snacking on-the-go as it tends to be at the park when the kids rather run around and play instead of sitting still and eating.  Or is that just my kids?!

Getting your kids to eat healthy meals and snacks can always be a stressful time of day, but it doesn’t have to be if you make it more fun for them.  They always love a little escape from the norm, so throw a blanket down, toss the plates and forks aside, and let them have at it!

I love to incorporate good seasonal produce in my dishes.  There is nothing better than fresh fruits and vegetables to make a dish stand out!  Risotto is one of those meals that is set to impress, and so very tasty when cooked properly.  I wanted incorporate some of the amazing in season asparagus that is at the market right now, and adding a little lemony touch with shrimp made for the perfect well planned out dish for dinner!

When I teach cooking classes, I am always telling my students how important it is to start with high quality tools in the kitchen, and good ingredients.  If you have those two things going for you, then you are much more likely to find success in the kitchen!  I have been loving my new Calphalon Signature™ Stainless Steel 12″ Omelette Pan I picked up at Macy’s, you can find them in-store or online.  The neat thing about this pan is that is made with high quality five layers of metal, that helps keep the heat even and precise.  It quickly responds to temperature changes, and it has such a durable surface.  I really loved the results, and it performed so well while making this Risotto recipe!

Pot de Crème is one of those desserts that looks fancy, and has an added measure of sophistication to it.  It is the perfect recipe to show your love for someone at the end of a romantic meal, and can be easily made for a large group. Sharing love through food is one of my absolute favorite ways to show my love for others, and well let’s be honest, chocolate is always a good idea!

I am partnering with Lindt Chocolate to bring you my favorite Pot de Crème recipe using a mix of their Excellence 70% Cocoa Dark Chocolate, and their Milk Chocolate LINDOR Truffle Bar.  When making a Pot de Crème, chocolate is the star, so using a quality chocolate like Lindt Chocolate makes all the difference in this recipe.

Surprisingly, Pot de Crème is very simple to make, and it is easily made in advance to serve at a dinner party or gathering.  This chocolatey custard has the perfect amount of chocolate, and serving it in heart shaped ramekins makes it even more special for Valentine’s Day!

Pot De Crème Recipe
makes 6-8 servings

9 oz Lindt Chocolate, roughly chopped (I used 6 oz of the Lindt EXCELLENCE 70% Cocoa Dark Chocolate Bar, and 3 oz of the LINDOR Milk Chocolate Truffle Bar)
1 1/2 cups heavy cream
1 1/2 cups whole milk
1/4 cup sugar (more if using bitter chocolate)
6 egg yolks
1/4 tsp salt

DIRECTIONS

Preheat the oven to 300° F.  Line a large roasting pan or baking dish with two layers of paper towels.  Place eight ramekins, in the pan.  Bring a medium saucepan of water to boil.  Once the water comes to a boil, remove from the heat and cover. In the meantime, place the chopped chocolate in a large heatproof bowl.  Bring 1 cup of the heavy cream to a boil in a small saucepan.  Once the cream reaches a boil, pour it over the chocolate and let stand for 1 minute.  Stir with a rubber spatula, starting in the center of the bowl and working outward in a circular motion, until the ganache is smooth; set aside.

Combine the remaining 1/2 cup heavy cream and the whole milk in the saucepan and bring to a boil.  Meanwhile, in a medium mixing bowl, whisk together the egg yolks, sugar, and salt until slightly thickened and pale yellow in color.  Drizzle in a small amount of the hot cream-milk mixture, whisking constantly, to temper the eggs.  Pour in the remainder of the hot liquid, still whisking constantly, until completely incorporated.  Finally, gently whisk the egg mixture into the ganache until incorporated. Spoon any skin that has formed off the top of the custard.

Divide the custard evenly between the prepared cups.  Pour some of the previously set aside hot water into the baking dish around the custard cups so that it reaches about halfway up the sides of the cups.  Cover the top of the pan tightly with foil, poking two holes in opposite corners.  Very carefully slide the pan into the oven. Bake 35-40 minutes, or until the custard jiggles only a bit in the center when tapped or lightly shaken.  Carefully remove the pan from the oven and transfer it to a cooling rack.  Allow the custards to rest in their warm water bath for 10 minutes, then remove the foil and very carefully transfer the cups from the water to the cooling rack.  Once they come to room temperature, cover individually with plastic wrap and refrigerate until ready to serve. Can be made a few days in advance!

Top with Homemade whipped cream!  And, a few chocolate shavings, and Valentine’s sprinkles if you want to make it extra festive!
