corn on the cob with shallot-thyme butter…

i’m currently obsessed with this corn on the cob. i can’t get enough of it. it’s beyond good.
i was inspired to make this from a dish at the pizzeria 712 my friend told be about and i couldn’t stop thinking about it until i tried something similar. i’m so glad i did.

{corn on the cob with shallot-thyme butter}
recipe found here

8 tablespoons [1 stick butter], room temperature
2/3 cup chopped shallots [3 oz]
2 tablespoons chopped fresh thyme or 2 tsp dried [i really recommend fresh]

6-9 ears of corn, shucked – boiled or grilled. to grill brush with olive oil and cook 10 min. away from direct heat. move around a lot. directions

directions

melt 2 tbsp butter in heavy small skillet over medium heat
add shallots and saute until brown, about 4-7 minutes
cool
combine remaining 6 tbsp butter and thyme in small bowl
add shallot mixture and blend well.

season to taste with salt and pepper

serve with corn.

old fashioned whole wheat blueberry muffins…

i’ve been in a baking mood like crazy the last month… the mr. was wondering if i was trying to kill him since he has a mild gluten allergy. so, i probably should lay off the gluten products a bit.
but, i made fresh blueberry muffins for the first time and they turned out so good.

here’s the recipe.

{blueberry muffins}

makes 12

ingredients
1 cup milk
1/2 cup butter
1 1/2 tsp orange zest
1 1/2 tsp vanilla extract
2 large eggs
2 cups whole wheat flour
3/4 cup sugar
2 1/2 tsp baking powder
3/4 tsp salt
1 1/2 cups fresh blueberries

crumble topping – [ a must! ]
1/2 c sugar
1/3 c flour
1/4 c butter [room temp]
1 1/2 tsp cinnamon
mix with fork

preheat oven to 400 degrees F.
grease a cupcake pan or place in muffin cups
combine first 4 ingredients in a small saucepan, stir over medium until butter melts, cool until warm to touch. beat in eggs
sift flour, sugar, baking powder, and salt into a large bowl
add milk mixture and stir just until blended
fold in blueberries
divide equally among muffin cups, add crumble topping

bake until golden and tester comes out clean

about 15-20 minutes
place on cooling rack

enjoy!

well, cherry tomatoes.

so sorry for the lack of posts last week. we’ve had a crazy last few weeks being out of town a lot. we’ve been tagging along with the mr. at some conferences and living out of hotel rooms and tents, well one night. we came home last weekend to find our cherry tomato plants bursting with bright red tomatoes! i was thrilled because i’ve been waiting this moment all summer long!

our zucchini plants each produced one zucchini. one yellow, and one green. i sautéed up the zucchini with the cherry tomatoes we picked and onions and garlic from a nearby farmer and voilà… a great dinner served with rice! [add a splash of soy sauce like my mom to the mixture with s+p.. so good]

so, i’ve been in the kitchen a lot this past month cooking and baking up a storm. i cook often, i just love to cook! and, i’ve been trying new things. so, i hope to share some of my latest creations. so, stay tuned for a lot of recipe posts..
