whole wheat waffles …

October 28, 2010

We eat waffles in our house like they are going out of style.  In fact, my children each eat a waffle for breakfast every morning.  For a while, I would buy them from the freezer section, then I realized, why not just make them?  Plus, they are much healthier homemade, and you know exactly what is going into them.
I will make a big batch, then place them in freezer bags, then pop them in the toaster to warm them up, so we can have homemade waffles every morning!
Check out the recipe below.
{Whole Wheat Waffles}
(adapted from this recipe from the little red house)
1/4 cup vegetable oil
1/2 cup applesauce
2 eggs
1 1/2 cups milk
1 tsp vanilla
2 cups whole wheat flour
1/4 cup ground flax seeds
1/3 cups old fashion rolled oats
1 tbs agave nectar
3 tsp baking powder
1/4 tsp salt
1 shake cinnamon
Preheat waffle iron.
Mix together oil, applesauce, eggs, milk, agave nectar, and vanilla.  Add dry ingredients, and stir until incorporated.  The batter will be thick.
Ladle batter onto sprayed waffle iron and cook until golden brown.
Serve with syrup and berries.

I BUY waffles like they are going out of style for my family. LOL. I will need to try this recipe, thanks for sharing it. Have you ever tried adding blueberries to the batter itself and then freezing them? Blueberry waffles are THE hit at my house.
