Cauliflower Cheese Soup Recipe with Shredded Sargento Cheese Toppings

Living in Utah, my family has learned to embrace the cold winter months.  We love the outdoors, and come hot or cold, it is always nice to get outside and enjoy family time!

We recently had our first big snowstorm here in Utah!  As soon as the first big snowfall hits, our kids are chomping at the bit to get outside and play in the snow, and of course, build a snowman!  I always love seeing how excited they are for the fresh fallen snow!

We successfully made our first family snowman of the year!  He might be the cutest one yet, and the kids promptly named him “Frosty!”  We came in from the frigid air, and warmed up with a nice warm bowl of cauliflower cheese soup, complete will all the fixings!  We teamed up with Modern Atelier to capture our fun family time in this video, and it is something I will cherish in the years to come!  I hope you enjoy it too!
 



One day my kids won’t look out the window with such excitement when they see that it has snowed, and one day they won’t be asking to build a snowman.  So, I’m going to embrace, and hold onto these memories as long as I can of being together and enjoying that excitement that only comes with the optimistic eyes of children when they look at fresh patch of snow!

I’ve always hoped to create a warm cozy home that my kids can come home to and feel warm and safe.  And, most of all feel joy and love here.  I love moments like this where we can enjoy our time together, and make those lasting memories!

Cheesy Cauliflower Soup with Sargento Cheese

I’m excited to partner with Sargento Cheese again to share with you my new recipe for a smooth yummy and cheesy cauliflower soup!  It is so tasty, and will warm you up this winter!  The key ingredients that make it shine are the Sargento Traditional Cut Shredded Sharp Cheddar Cheese, and a little added kick using Sargento Traditional Cut Shredded Pepper Jack Cheese.
Cauliflower Cheese Soup Recipe with Shredded Sargento Cheese Toppings

Cauliflower Cheese Soup
Serves 6

Ingredients
3 tablespoons (¼ cup) un-salted butter
1 medium yellow onion, diced
1/4 cup flour
2 cups half and half milk
1 1/2 cups water
14.5 ounce can of chicken broth
2 to 2 1/2 lb head of cauliflower, washed, and trimmed
1 3/4 cups Sargento Traditional Cut Shredded Sharp Cheddar Cheese
3/4 cups Sargento Traditional Cut Shredded Pepper Jack Cheese
1 1/2 teaspoons Dijon Mustard

Creamy Cauliflower Cheese Soup IngredientsDirections:

In a large stock pot, melt butter.  Cook the onion over a medium to medium low temperature for about 10 minutes.  Mix in the flour to create a roux and stir for 2 minutes.

Stir in the half and half milk, water, and chicken broth.

Add the chopped cauliflower.  Bring it to a boil, then simmer and cover and cook for 15 minutes on medium low.

Place the soup into a blender.  You will need to do it in batches, and blend until smooth, then pour it into a clean pot.

Return back to the heat over a medium heat.  Stir in the Dijon Mustard, then stir in the Sargento Cheese, and stir until melted.  Add salt and pepper to taste.

Serve with some tasty toppings:
Shredded Sharp Cheddar Cheese
Green Onion Slices
Bacon Crumbles
