Recipe // caribbean flank steak

Father’s Day is in just a few short days, and if you are still looking for the perfect menu, I have a great steak recipe to share!  Flank steak is a great cut of meat that doesn’t always get a lot of credit.  But, if cooked properly, it can be tender, moist, very tasty and, not to mention reasonably priced!
I am sharing a wonderful flank steak recipe for caribbean flank steak.  This recipe has a unique marinade of caribbean flavors, including pineapple, lime juice, cilantro, and seasonings.
{Caribbean Flank Steak with Coconut Rice}

Ingredients
1 beef flank steak (about 1-1/2 pounds)
1 can (8 ounces) crushed pineapple
Marinade:
1/4 cup fresh lime juice
2 tablespoons finely chopped fresh cilantro
1/2 tsp dried minced onion
1/2 tsp dried thyme
1/4 tsp ground allspice
1 tsp fresh ground pepper
1 shake ground cinnamon
1 shake cayenne pepper
1/4 tsp salt
Coconut Rice:
2 cups water
1 cup uncooked brown rice
3 tablespoons shredded coconut, toasted
2 tablespoons sliced almonds, toasted
1 tablespoon finely chopped fresh cilantro
Instructions
  1. Drain pineapple, reserving 1/4 cup juice for Marinade; discard excess juice. Reserve crushed pineapple for Coconut Rice.
  2. Combine marinade ingredients and reserved pineapple juice in small bowl. Place beef steak and marinade in food-safe plastic bag; turn steak to coat. Close bag securely and marinate in refrigerator 6 hours or as long as overnight, turning occasionally.
  3. Prepare Coconut Rice. Combine water and rice in medium saucepan; bring to a boil. Reduce heat; cover and simmer 35 to 45 minutes or until rice is tender. Remove from heat. Stir in reserved pineapple, coconut, almonds and cilantro. Season with salt, as desired.
  4. Meanwhile, remove steak from marinade; discard marinade. Place steak on grid over medium, ash-covered coals. Grill, covered, 11 to 16 minutes (over medium heat on preheated gas grill, covered, 16 to 21 minutes) for medium rare (145°F) to medium (160°F) doneness, turning occasionally. Season with salt, as desired. 
  5. Carve steak across the grain into thin slices. Serve with rice.

review: avery custom product labels + a giveaway…

i am a big fan of avery labels, so when i was contacted by red sky public relations for avery to do a review on their new merchandising products, i was all on board!

some of my favorite new labels from avery are the 2 1/2″ round kraft brown round labels.  i actually bought a package of them a few months back before i was contacted to do this review.  i love kraft paper, and kraft paper labels are hard to find, so it was nice to see avery come out with some!

i love to customize items, and package them up really cute!  these round labels were perfect for some homemade apricot jam and tomatillo salsa that i made.  how cute would that be delivered to some neighbors!
i just went over to avery’s design and print online and typed in my product number.  i was able to choose a template for the style of label i wanted, and customize the colors, fill colors, and fonts.  all i had to do was print it on my printer!  it was pretty easy!  you can also upload your custom logos, or pictures too!

DIY // father’s day freezer paper stencil t-shirts

father’s day is coming up just around the corner, and i have a fun DIY father’s day gift idea to share with you today!

my children love to get involved and help make gifts for people they love.  so, for father’s day, we thought it would be fun to make their daddy some fun freezer paper stencil t-shirts!  he likes to wear t-shirts when he’s home from work relaxing with the family, so we knew he would get a lot of use out of them.

i’ve been making freezer paper stencils for years, (see here, and here.) it isn’t hard to do at all, and making stencils out of freezer paper is easy, and works really well!

we decided on a few designs, and we got to work.

i made sure to recruit my cute little helpers to help paint the t-shirts.

they were very proud to show their daddy what they made for him!

we made a camper, because they like to go camping with their dad.

and, of course, “super daddy” since he’s a real hero in their eyes!
